Turkey Meatballs & Noodle Soup

 

     

Ingredients:

  • 1 tablespoon Butter
  • 1 medium red bell pepper, cut into strips
  • 3 tablespoons no-salt-added tomato paste
  • 1 small (1/2 cup) onion, chopped
  • 1 teaspoon finely chopped fresh garlic
  • 16 (1 1/2-inch) Nature's Rancher frozen cooked Turkey meatballs
  • 1/2 cup water
  • 2 teaspoons dried Italian seasoning*
  • 3 cups frozen chopped broccoli
  • 2 ounces (1 cup)uncooked dried egg noodles
  • Shredded Parmesan cheese, if desired
  • *Substitute 1/2 teaspoon each dried basil leaves, dried marjoram leaves and dried oregano leaves and 1/4 teaspoon rubbed sage.

    *Substitute Nature's Rancher Fully Cooked Angus Meatballs for diffrent taste.

Directions:


    Melt butter in saucepan until sizzling; add bell pepper, mushrooms, onion and garlic. Cook over medium-high heat 2-3 minutes or until vegetables are crisply tender. Add Nature's Rancher meatballs, water, broth and Italian seasoning. Continue cooking 10-12 minutes or until mixture comes to a boil.

    Add broccoli and noodles. Reduce heat to medium. Continue cooking, stirring occasionally, 5 minutes or until pasta is tender. Top each serving with cheese.

 



Theo's Swedish Meatball Casserole

 

 

 

     

Ingredients:

  • 3 cups (6 ounces)uncooked dried egg noodles
  • 2 tablespoons butter
  • 4 ounces fresh button mushrooms, sliced into quarters
  • 2 1/2 cups water
  • 2 (1.3-ounce) packages dried beef or pork gravy mix
  • 1 cup sour cream
  • 1 teaspoon ground nutmeg
  • 1 (22-ounce) package frozen fully cooked Nature's Rancher Turkey meatballs, thawed
  • 1/4 cup chopped fresh parsley
  • *Substitute Nature's Rancher Fully Cooked Angus Meatballs for diffrent taste.

Directions:

    Heat oven to 375°F. Spray 2-quart round casserole with no-stick cooking spray. Set aside. Cook noodles according to package directions. Drain. Melt butter in 10-inch skillet until sizzling; add mushrooms. Cook, stirring occasionally, 5-6 minutes or until softened.
    Combine water and gravy mix in 3-quart saucepan. Cook over medium heat 3-5 minutes or until mixture comes to a boil and is thickened. Remove from heat; stir in sour cream and nutmeg. Add cooked egg noodles, mushrooms, Nature's Rancher Turkey meatballs and parsley; gently stir to coat. Spoon noodle mixture into prepared casserole. Bake 30-40 minutes or until heated through..

 




Dave's Sweet & Sour Trurkey Meatballs

 

 

 

     

Ingredients:

  • 1 (20-ounce) can pineapple chunks in juice, drained, reserve juice
  • 2 tablespoons Butter
  • 2 tablespoons firmly packed brown sugar
  • 1 tablespoon cornstarch
  • 2 tablespoons cider vinegar
  • 1 tablespoon soy sauce
  • 1/2 teaspoon ground ginger
  • 2 medium green and/or red bell peppers, cut into 1-inch pieces
  • 1 bag of  frozen pre-cooked Nature's Rancher Turkey meatballs*, thawed
  • *Substitute Nature's Rancher Fully Cooked Angus Meatballs for diffrent taste.

Directions:

    Heat oven to 350°F. Combine reserved pineapple juice, butter, brown sugar, cornstarch, vinegar, soy sauce and ginger in 1-quart saucepan. Cook over medium heat, stirring occasionally, 4-6 minutes or until mixture is thickened and bubbly. Boil, stirring constantly, 1 minute.
    Place sauce, pineapple chunks, bell peppers and Nature's rancher Turkey meatballs into ungreased 3-quart casserole; stir gently to coat. Cover; bake 25-30 minutes or until meatballs are heated through. Serve in chafing dish with toothpicks or keep warm in slow cooker.

 



Nature's Rancher

Ground Turkey Sloopy Janes

 

Serves 4

    A healthier take on typical Sloppy Joes, this tangy recipe packs in the veggies and Nature's Rancher ground turkey. Serve on sprouted whole grain buns, brown rice or whole grain pasta with a large green salad on the side.

Ingredients:

  • 1 yellow onion, chopped
  • 1 green bell pepper, chopped
  • 3 tablespoons no-salt-added tomato paste
  • 1 cup grated carrots (from 1 large carrot)
  • 3/4 pound Nature's Rancher ground turkey
  • 1 (15-ounce) can no-salt-added tomato sauce
  • 1/2 cup chopped pitted dates (about 5 dates)
  • 4 teaspoons balsamic vinegar
  • 5 teaspoons yellow mustard

Directions:

    Heat a large skillet over medium-high heat. Add onion and pepper and cook until starting to stick and lightly brown, stirring frequently, 4 to 5 minutes. Stir in tomato paste, carrots and 2 tablespoons water and cook 2 minutes longer or until carrots are tender, stirring occasionally and scraping any browned bits from the surface of the pan. Add turkey and cook 3 minutes or until turkey is no longer pink, stirring to break it up as it cooks. Stir in tomato sauce, dates, vinegar, mustard and 1/2 cup water and bring to a boil. Reduce heat to low, cover and simmer 15 minutes to blend flavors.

Spicy Corn & Chicken/Turkey Chili

 

Serves 4 to 6

Quick, easy and delicious, this chili is perfect for a stress-free weeknight dinner. The corn adds a mildly sweet flavor to the spicy sauce. Add a can of pinto or kidney beans for extra nutrition. Nature's Rancher ground turkey may also be substituted for the Nature's Rancher chicken.

Ingredients:

  • 1 tablespoon extra-virgin olive oil
  • 1 large onion, coarsely chopped
  • 2 cloves garlic, finely chopped
  • 1 1/2 tablespoons chili powder
  • 2 teaspoons oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • Cayenne powder, to taste
  • 1 pound Nature's Rancher ground chicken breast
  • 1 (15-ounce) can no-salt-added tomato sauce
  • 1/2 cup mild or medium salsa
  • 3 cups fresh or frozen corn kernels
  • Fine sea salt, to taste
  • 1/3 cup chopped fresh cilantro

Directions:

    In a large soup pot or Dutch oven, heat oil over medium heat. Add onion and garlic and cook 5 minutes, stirring frequently until onions are translucent. Stir in chili powder, oregano, cumin, coriander and cayenne and cook 1 minute, stirring constantly.

    Add chicken. Stir to break up and brown for 3 minutes. Add tomato sauce, 1 cup water, salsa and corn. Season with salt, then bring to a boil. Reduce to a simmer, cover, and cook for 20 minutes, stirring often, until flavors have melded and chili is thick. Stir in cilantro and serve.

Turkey Burgers with Cucumber-Pineapple Relish

 

Serves 6

Tangy fruit relish adds a refreshing twist to the usual burger fare.

Ingredients:

  • Relish
  • 1/3 cup seasoned rice vinegar
  • 1 teaspoon honey
  • 1 tablespoon grated fresh ginger
  • 3 tablespoons fresh lime juice
  • 1 jalapeño pepper, stemmed, seeded and finely chopped
  • 1/2 cup cilantro leaves, chopped
  • 1/2 English cucumber, chopped
  • 2 cups chopped fresh pineapple
  • 1/2 red bell pepper, cored, seeded and chopped
  • 1/2 medium red onion, finely chopped

Directions:

    To prepare the relish, toss all ingredients together in a large bowl. Set aside.

    Spray a large skillet or grill with cooking spray and heat on medium high heat. Cook Nature's Rancher Turkey burgers, flipping once, until cooked through and golden brown, 6 to 7 minutes per side. Transfer burgers to toasted buns and top with lettuce and cucumber-pineapple relish.
